Update versions and dependencies

It has been a while, there are new versions available of dependencies that should be incorporated such as:

• Python
• Pandas
• Find fix for Jupyter event loop problem that happens with python 3.14

Tried upgrading to python 3.14.
As of today, this will break the notebooks for several reasons but most importantly:
The Jupyter event loop and Mosaik’s simulation event loop both try to control asyncio, and the old nest_asyncio.apply() workaround no longer reliably handles that in your new Python 3.14 environment.
