Add example of VDG likelihood and fix mixing matrix in observable

## 🚀 What's the issue?
We need an example on how to use the VDG likelihood. Additionally, the call to the convolved power spectrum multipoles in the observables notebook is now deprecated (after the new release of euclidlib)
