Document gateway-api CRDs version required for each istio version

Currently in the Istio docs, the compatibility matrix only lists the Kubernetes versions supported for each Istio version https://istio.io/latest/docs/releases/supported-releases/

It would be helpful to have a list of which Gateway API versions are supported for each Istio version there as well.
