Adding 163 xStocks (623 chain entries total) to the CoW Swap token list.

All tokens are tokenised equities issued by Backed Finance — fully-backed.
Website: https://xstocks.fi · Docs: https://docs.xstocks.fi

Chain coverage: Ethereum (chainId 1), BSC (56), Arbitrum (42161), Ink (57073) — the four chains CoW Swap supports. xStocks also deploy to Mantle, HyperEVM, Solana, and TON; those are intentionally omitted from this PR since they aren't in CoW Swap's chain set.

Updated on 2026-05-21: this PR has been re-pushed with the current xStocks catalogue (163 tokens, +30 since the original submission) and the live product branding (Backed Finance as legal issuer; xStocks as the product brand across website, socials, and contact). • +30 tokens — catalogue grew from 133 to 163 xStocks (BRK.Bx among others activated since)
• +120 chain entries — total goes from 503 to 623 across Ethereum / BSC / Arbitrum / Ink
• Branding aligned with the live product — issuer is Backed Finance (legal entity), brand is xStocks across name / website / socials (xstocks.fi, @xstocksfi, t.me/xstocksfi)
• Wrappers excluded — only canonical token contracts ship in this PR; V1/V2 wrappers are tracked separately and are not part of CoW Swap routing
• Body corrected — earlier version mentioned chain coverage inaccurately; the four chains in scope here (1, 56, 42161, 57073) are exactly CoW Swap's supported set
